Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup unsalted butter, cold and cubed
  • 1 cup mashed potatoes, cooled
  • 0.5 cup whole milk
  • 0.5 cup shredded cheddar cheese (optional)
  • 0.5 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 unit egg, beaten
  • 2 tablespoons olive oil for brushing
  • 2 tablespoons grated Parmesan cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and dried parsley.

Step 3

Cut in the cold cubed butter using a pastry cutter or your fingers, until the mixture resembles coarse crumbs.

Step 4

Stir in the cooled mashed potatoes and shredded cheddar cheese (if using) until just combined.

Step 5

Gradually add the milk, mixing gently until the dough comes together. Be careful not to overwork the dough.

Step 6

Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1/2 inch thick.

Step 7

Using a sharp knife or a pizza cutter, slice the dough into long strips, about 1 inch wide and 5-6 inches long.

Step 8

Gently transfer the strips to the prepared baking sheet, leaving a little space between them.

Step 9

Brush the strips with the beaten egg to give them a golden finish, and if desired, sprinkle grated Parmesan cheese on top.

Step 10

Bake for 20 minutes, or until the breadsticks are puffed and golden brown.

Step 11

Once baked, brush the tops with a little olive oil for a glossy finish. Serve warm.
