Ingredients

  • 2 medium-sized zucchini
  • 1 teaspoon salt
  • 2 large eggs

  • 2 cloves garlic (minced)
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley (chopped)
  • 3 tablespoons olive oil (for frying)

Directions

Step 1

Grate the zucchini using a box grater and place it in a large bowl. Sprinkle with salt and let sit for 10 minutes. This helps to draw out excess water from the zucchini.

Step 2

After 10 minutes, transfer the zucchini to a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible. Return the zucchini to the bowl.
