Ingredients

  • 120 g Oat flour
  • 60 g Vanilla protein powder (whey or plant-based)
  • 1 tsp Baking powder
  • 0.25 tsp Salt
  • 60 g Unsalted butter or coconut oil (softened)
  • 60 g Greek yogurt
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 70 g White chocolate chips
  • 3 tbsp Honey or maple syrup

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium-sized mixing bowl, combine the oat flour, vanilla protein powder, baking powder, and salt. Mix well to ensure even distribution.

Step 3

In a separate large mixing bowl, cream together the softened butter (or coconut oil) and honey (or maple syrup) until smooth and creamy.

Step 4

Add the Greek yogurt, egg, and vanilla extract to the wet ingredients, whisking until fully incorporated.

Step 5

Gradually mix the dry ingredients into the wet ingredients, stirring until a soft cookie dough forms. Avoid overmixing, as this can make the cookies dense.

Step 6

Gently fold in the white chocolate chips, ensuring they are evenly distributed throughout the dough.

Step 7

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Flatten each cookie slightly with the back of a spoon or your fingertips as the dough will not spread too much during baking.

Step 9

Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden. The centers may look slightly soft, but they will firm up as they cool.

Step 10

Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Enjoy your high-protein white chocolate cookies as a quick snack or dessert!
