Ingredients

  • 1 cup Oat flour
  • 1 scoop Vanilla protein powder (whey or plant-based)
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 2 large Eggs
  • 0.75 cup Unsweetened almond milk (or any milk of choice)
  • 0.25 cup Unsweetened Greek yogurt
  • 1 teaspoon Vanilla extract
  • 0 as needed Cooking spray or neutral oil
  • 1 cup Strawberries, sliced
  • 0.5 cup Whipped cream
  • 0 to taste Optional maple syrup or honey for serving

Directions

Step 1

In a large mixing bowl, whisk together the oat flour, vanilla protein powder, baking powder, and ground cinnamon until well combined.

Step 2

In a separate bowl, beat the eggs. Add almond milk, Greek yogurt, and vanilla extract, and mix until smooth.

Step 3

Pour the wet ingredients into the dry ingredients and stir until a thick but pourable batter forms. If the batter is too thick, add a tablespoon of almond milk at a time until the desired consistency is reached.

Step 4

Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or brush with a neutral oil.

Step 5

Pour a portion of the batter into the waffle iron (about 1/4 to 1/3 cup, depending on your waffle iron's size), spreading it out evenly. Close the waffle iron and cook until golden and crisp, usually 4-5 minutes.

Step 6

Carefully remove the waffle and repeat with the remaining batter, regreasing the waffle iron as needed.

Step 7

To serve, place a waffle on a plate, top with sliced strawberries, and a dollop of whipped cream. Drizzle with maple syrup or honey if desired.

Step 8

Enjoy your protein-packed waffles warm!
