Ingredients

  • 1.5 cups Oat flour
  • 1 scoop Plant-based protein powder (unflavored or vanilla)
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1 tablespoon Ground flaxseed
  • 2.5 tablespoons Water
  • 0.25 cups Coconut oil (melted)
  • 0.25 cups Maple syrup
  • 0.25 cups Almond butter
  • 1 teaspoons Vanilla extract
  • 0.5 cups Vegan chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, combine the ground flaxseed and water to make a flax 'egg'. Stir well and let it sit for 5 minutes to thicken.

Step 3

In a large mixing bowl, whisk together the oat flour, protein powder, baking soda, and salt.

Step 4

In a separate bowl, mix the melted coconut oil, maple syrup, almond butter, vanilla extract, and the prepared flax 'egg' until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. The dough should be sticky but manageable.
