Ingredients

  • 2 tablespoons ground flaxseed
  • 5 tablespoons water
  • 1 cup unsweetened peanut butter (or almond butter)
  • 0.5 cup maple syrup
  • 0.25 cup unsweetened almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 0.75 cup oat flour (certified gluten-free if needed)
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup vegan chocolate protein powder
  • 0.5 cup dark chocolate chips (vegan)
  • 0.25 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper or lightly grease it with coconut oil.

Step 2

In a small bowl, combine the ground flaxseed and water to make a flax egg. Let it sit for 5 minutes until it thickens.

Step 3

In a large mixing bowl, whisk together the peanut butter, maple syrup, almond milk, and vanilla extract until smooth.

Step 4

Add the prepared flax egg to the wet ingredients and mix to combine.

Step 5

In a separate bowl, sift together the oat flour, cocoa powder, baking powder, salt, and vegan chocolate protein powder to remove any clumps.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until a thick, smooth batter forms.

Step 7

Fold in the dark chocolate chips and chopped walnuts (if using).

Step 8

Transfer the batter to the prepared baking pan and spread it evenly with a spatula.

Step 9

Bake for 22-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (do not overbake).

Step 10

Allow the brownies to cool completely in the pan before slicing into 12 squares.

Step 11

Store the brownies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
