  • 2 Eggs (large)
  • 1 teaspoon Vanilla extract
  • 60 milliliters Unsweetened almond milk
  • 30 milliliters Coconut oil (melted)
  • 60 grams Honey (or maple syrup for a refined sugar-free option)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners or grease it lightly with cooking spray.

Step 2

In a large mixing bowl, whisk together the whey protein powder, all-purpose flour, baking powder, baking soda, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the Greek yogurt, eggs, vanilla extract, almond milk, melted coconut oil, and honey until smooth.
