Ingredients

  • 3 large Eggs
  • 250 ml Milk
  • 250 ml Water
  • 150 grams High-protein flour (like whole wheat or a protein blend)
  • 0.5 teaspoons Salt
  • 2 tablespoons Vegetable oil or butter (melted)
  • 200 grams Low-fat cottage cheese
  • 100 grams Greek yogurt (unsweetened, for creaminess)
  • 2 tablespoons Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest
  • 1 tablespoons Optional powdered sweetener (like erythritol or powdered sugar)
  • 1 teaspoons Cocoa powder (optional, for dusting)

Directions

Step 1

In a large bowl, whisk together the eggs, milk, water, and a pinch of salt.

Step 2

Gradually add the high-protein flour to the wet mixture, whisking constantly to avoid lumps.

Step 3

Whisk in the melted vegetable oil or butter until smooth. Allow the batter to rest for 10 minutes.

Step 4

Preheat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with oil or butter.

Step 5

Pour approximately 1/4 cup of batter into the pan and quickly tilt and rotate to spread it evenly and thinly.

Step 6

Cook the crepe for about 1-2 minutes, or until the edges start to lift, then flip and cook for another 1 minute. Repeat with the remaining batter.

Step 7

In a medium bowl, mix the cottage cheese, Greek yogurt, honey or maple syrup, vanilla extract, lemon zest, and optional powdered sweetener until smooth.

Step 8

Lay a cooked crepe flat on a clean surface. Spread 2-3 tablespoons of the cheese filling across the center.

Step 9

Roll the crepe tightly around the filling, forming a log-like shape. Repeat with all the crepes and filling.

Step 10

Serve the turos palacsinta warm or at room temperature, optionally dusted with cocoa powder or a drizzle of additional honey.
