Ingredients

  • 250 grams Cottage cheese (low-fat, high-protein)
  • 3 large Eggs
  • 30 grams Vanilla-flavored whey protein powder
  • 40 grams Oat flour
  • 30 grams Unsalted butter (melted)
  • 200 milliliters Milk (low-fat or almond milk)
  • 50 grams Honey or maple syrup
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a muffin tin or line it with paper cups.

Step 2

In a blender or food processor, add the cottage cheese, eggs, vanilla-flavored whey protein powder, oat flour, melted butter, milk, and honey (or maple syrup). Blend until the mixture is smooth and lump-free.

Step 3

Add the baking powder, ground cinnamon, and lemon zest to the blended mixture. Pulse a few more times to combine.

Pour the batter evenly into the prepared muffin tin, filling each cup about 3/4 of the way full.
