Ingredients

  • 300 g All-purpose flour
  • 50 g Whey protein powder (unflavored)
  • 7 g Active dry yeast
  • 200 ml Warm water (110°F/45°C)
  • 5 g Salt
  • 10 g Brown sugar
  • 30 g Butter (melted)
  • 50 g Baking soda
  • 1000 ml Water for baking soda bath
  • 5 g Coarse sea salt (for sprinkling)

Directions

Step 1

In a small bowl, mix the warm water, brown sugar, and active dry yeast. Let it sit for 5-10 minutes until foamy to activate the yeast.

Step 2

In a large mixing bowl, combine the all-purpose flour, whey protein powder, and salt.

Step 3

Add the melted butter and the yeast mixture into the dry ingredients and mix until a dough forms.

Step 4

Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic.

Step 5

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until it doubles in size.

Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.
