Ingredients

  • 2 pieces large eggs
  • 120 milliliters liquid egg whites
  • 100 grams tempeh
  • 2 tablespoons vegetable oil
  • 2 pieces shallots
  • 2 pieces garlic cloves
  • 1 piece bird’s eye chilies (optional)
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon soy sauce
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 stalk scallions (for garnish)

Directions

Step 1

Finely slice the shallots, garlic, and bird’s eye chili (if using). Set these aromatics aside.

Step 2

Cube the tempeh into small 1 cm pieces.

Step 3

In a small bowl, whisk together the liquid egg whites and eggs until well combined. Add a pinch of salt and pepper.

Step 4

Heat 1 tablespoon of vegetable oil in a non-stick frying pan over medium heat. Add the tempeh and cook until golden and slightly crispy. Remove the tempeh from the pan and set aside.

Step 5

In the same pan, add the remaining 1 tablespoon of vegetable oil. Lower the heat slightly and add the sliced shallots, garlic, and chili. Sauté until fragrant and the shallots are translucent, about 2-3 minutes.
