Finely slice the shallots, garlic, and bird’s eye chili (if using). Set these aromatics aside.
Cube the tempeh into small 1 cm pieces.
In a small bowl, whisk together the liquid egg whites and eggs until well combined. Add a pinch of salt and pepper.
Heat 1 tablespoon of vegetable oil in a non-stick frying pan over medium heat. Add the tempeh and cook until golden and slightly crispy. Remove the tempeh from the pan and set aside.
In the same pan, add the remaining 1 tablespoon of vegetable oil. Lower the heat slightly and add the sliced shallots, garlic, and chili. Sauté until fragrant and the shallots are translucent, about 2-3 minutes.
Push the aromatics to one side of the pan, then pour the egg mixture into the other side. Let it cook undisturbed for about 2 minutes until the bottom starts to set.
Gently scramble the eggs to create large, fluffy curds while incorporating the aromatics. Add the cooked tempeh back to the pan.
Drizzle sweet soy sauce and soy sauce evenly over the mixture and gently toss to coat everything in the sauces.
Cook for another 1-2 minutes, ensuring the eggs are fully set and everything is heated through.
Transfer the High Protein Telur Goreng to a plate and garnish with sliced scallions. Serve immediately with steamed rice and sambal on the side, if desired.
