  • 1 tablespoon Soy sauce

  • 1 teaspoon Sugar
  • 2 cups Cooked sushi rice
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sugar (for rice)
  • 0.25 teaspoon Salt
  • 2 sheets Nori sheets
  • 1 small Cucumber
  • 0.5 cup Cooked shrimp (optional)
  • 1 teaspoon Sesame seeds
  • 1 teaspoon Vegetable oil

Directions

Step 1

In a bowl, whisk together eggs, soy sauce, mirin, and 1 teaspoon of sugar until well combined.

Step 2

Heat a non-stick skillet over medium heat and lightly grease it with vegetable oil. Pour a thin layer of the egg mixture into the skillet and let it cook until just set.

Step 3

Carefully roll the cooked egg layer to one side of the pan. Pour in another thin layer of the egg mixture and allow it to set, then roll it onto the previous layer. Repeat until all the egg mixture has been cooked and layered, forming a rolled omelette.

Remove the tamago (omelette roll) from the pan and let it cool. Once cooled, slice into thin rectangular strips.

Use a sharp knife to slice the roll into bite-sized pieces. Repeat the process with the second nori sheet.
