In a bowl, whisk together eggs, soy sauce, mirin, and 1 teaspoon of sugar until well combined.
Heat a non-stick skillet over medium heat and lightly grease it with vegetable oil. Pour a thin layer of the egg mixture into the skillet and let it cook until just set.
Carefully roll the cooked egg layer to one side of the pan. Pour in another thin layer of the egg mixture and allow it to set, then roll it onto the previous layer. Repeat until all the egg mixture has been cooked and layered, forming a rolled omelette.
Remove the tamago (omelette roll) from the pan and let it cool. Once cooled, slice into thin rectangular strips.
Prepare the sushi rice by combining rice vinegar, 1 teaspoon of sugar, and salt in a small bowl. Gently mix the seasoning into the warm cooked sushi rice until evenly coated. Allow the rice to cool to room temperature.
Peel the cucumber and cut it into thin matchstick-sized strips.
Lay a sheet of nori on a bamboo sushi mat (shiny side down). Spread an even layer of sushi rice over the nori, leaving a 1-inch border at the top edge.
Sprinkle sesame seeds over the rice for added flavor and texture.
Place slices of the tamago, cucumber strips, and optional cooked shrimp lengthwise across the center of the rice layer.
Using the bamboo mat, carefully roll the sushi into a tight cylinder, starting from the bottom edge. Press gently to seal the roll.
Use a sharp knife to slice the roll into bite-sized pieces. Repeat the process with the second nori sheet.
