Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw cashews
  • 1 cup Roasted chickpeas (plain or lightly salted)
  • 1 cup Pumpkin seeds (pepitas)
  • 0.5 cup Dried cranberries (unsweetened or no added sugar)
  • 0.5 cup Dried mango (unsweetened, chopped)
  • 2 tablespoons Maple syrup
  • 1 tablespoon Coconut oil (melted)
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Chili powder
  • 0.25 teaspoon Paprika (smoked or sweet)
  • 0.25 teaspoon Sea salt

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the raw almonds, raw cashews, roasted chickpeas, and pumpkin seeds. Set aside the dried cranberries and chopped dried mango for later.

Step 3

In a small bowl, whisk together the maple syrup, melted coconut oil, ground cinnamon, chili powder, paprika, and sea salt until the mixture is well combined.

Step 4

Pour the sweet and spicy glaze over the nut and seed mixture in the large bowl. Toss until everything is evenly coated.

Step 5

Spread the mixture in a single layer on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, stirring halfway through to ensure even toasting.

Step 6

Remove the tray from the oven and allow the mixture to cool completely. The glaze will harden as it cools, giving the trail mix a crisp coating.

Step 7

Once cooled, mix in the dried cranberries and chopped dried mango.

Step 8

Store the trail mix in an airtight container at room temperature for up to two weeks or in the refrigerator for longer freshness.

Step 9

Divide into portable serving portions as needed, and enjoy!
