Ingredients

  • 2 pieces Whole wheat tortillas
  • 2 cups Raw spinach
  • 1 cup Black beans (cooked or canned, drained and rinsed)
  • 1 cup Shredded low-fat mozzarella cheese
  • 0.5 cup Cottage cheese
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Paprika
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Add the raw spinach to the skillet and sauté for 2-3 minutes until wilted. Remove from the skillet and set aside.

Step 3

In a small bowl, mix the black beans with garlic powder, cumin, paprika, salt, and black pepper.

Step 4

Place one tortilla on a flat surface. Spread half of the shredded mozzarella cheese evenly over the tortilla.

Step 5

Layer the cooked spinach, seasoned black beans, and cottage cheese over the mozzarella cheese.

Step 6

Sprinkle the remaining shredded mozzarella cheese on top, then cover with the second tortilla.

Step 7

Heat the skillet again over medium heat. Place the assembled quesadilla carefully in the skillet and cook for 2-3 minutes on one side, pressing gently with a spatula.

Step 8

Flip the quesadilla and cook for an additional 2-3 minutes, until the tortilla is golden and crispy, and the cheese is melted.

Step 9

Remove the quesadilla from the skillet and let it cool for 1-2 minutes. Slice into quarters and serve warm.
