Ingredients

  • 2 pieces puff pastry sheets
  • 200 grams fresh spinach
  • 150 grams feta cheese
  • 100 grams ricotta cheese
  • 3 large eggs
  • 2 pieces garlic cloves
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon dried oregano
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

Defrost the puff pastry sheets according to the package instructions if using frozen puff pastry.

Step 3

Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

Step 4

Add the spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let it cool slightly.

Step 5

In a medium mixing bowl, combine the ricotta cheese, crumbled feta cheese, 2 beaten eggs, salt, black pepper, and dried oregano.

Once the spinach has cooled, squeeze out any excess water and chop it finely. Add the spinach to the cheese mixture and stir until well combined.

On a lightly floured surface, roll out each puff pastry sheet if needed to smooth the edges. Cut each sheet into 3 equal rectangles.
