Ingredients

  • 300 grams All-purpose flour
  • 50 grams Whey protein powder (unflavored)
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 120 milliliters Warm milk (around 40°C/104°F)
  • 100 grams Greek yogurt (plain, full-fat or low-fat)
  • 1 large Egg
  • 1 tablespoon Honey or sugar
  • 40 grams Unsalted butter (softened)
  • 1 serving Egg wash (1 egg mixed with 1 tablespoon water or milk, optional)
  • 1 tablespoon Sesame seeds or poppy seeds (optional, for topping)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whey protein powder, salt, and instant yeast.

Step 2

In a separate bowl, whisk together the warm milk, Greek yogurt, egg, and honey (or sugar) until smooth.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring with a spatula or wooden spoon until a shaggy dough forms.

Step 4

Add the softened butter and knead the dough by hand or using a stand mixer with a dough hook attachment for 8-10 minutes, until smooth and elastic. The dough should be slightly tacky but not sticky. If it's too sticky, add a little more flour, 1 tablespoon at a time.

Step 5

Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Step 6

Punch down the risen dough and divide it into 8 equal portions. Shape each portion into a smooth ball and place them on a parchment-lined baking sheet, spaced apart to allow for rising.

Step 7

Cover the buns loosely with plastic wrap or a kitchen towel and let them rise again for 30-40 minutes, or until puffy.

Step 8

Preheat the oven to 190°C (375°F). If desired, brush the buns with egg wash and sprinkle sesame seeds or poppy seeds on top.

Step 9

Bake in the preheated oven for 16-18 minutes, or until golden brown on top. Remove from the oven and let the buns cool slightly on a wire rack before serving.

Step 10

Enjoy your soft and fluffy high-protein baked buns warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
