Ingredients

  • 400 grams Extra firm tofu
  • 1 Red bell pepper

  • 200 grams Broccoli
  • 2 tablespoons Olive oil
  • 3 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 can (400g) Black beans
  • 1 cup Corn kernels
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Press the extra firm tofu to remove excess moisture. Once pressed, cut the tofu into thin strips.

Step 2

Slice the red, green, and yellow bell peppers into thin strips. Thinly slice the red onion and zucchini.

Step 3

Cut the broccoli into small florets.

Step 4

In a large bowl, combine soy sauce, lime juice, ground cumin, chili powder, garlic powder, and smoked paprika. Add salt and black pepper to taste. Mix well.
