Ingredients

  • 300 grams Ground chicken breast
  • 200 grams Ground pork loin
  • 100 grams Small shrimp, peeled and deveined
  • 1 whole Egg white
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 2 teaspoons Cornstarch
  • 1 teaspoon Sugar
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Ground white pepper
  • 1 teaspoon Grated ginger
  • 2 tablespoons Chopped green onion
  • 20 pieces Wonton wrappers
  • 40 grams Frozen peas or edamame

Directions

Step 1

In a large mixing bowl, combine the ground chicken, ground pork, and shrimp. Mix until well incorporated.

Step 2

Add the egg white, soy sauce, oyster sauce, cornstarch, sugar, sesame oil, ground white pepper, grated ginger, and chopped green onion to the meat mixture. Mix thoroughly until all ingredients are well integrated and the mixture is slightly sticky.

Step 3

Prepare a clean, flat surface and place a wonton wrapper in the palm of your hand or on the surface.

Step 4

Spoon about 1 tablespoon of the filling into the center of the wrapper.

Step 5

Gently gather the edges of the wrapper around the filling, pleating as you go to form a cup shape. The filling should be exposed at the top. Press gently to seal the bottom.

Step 6

Place a single pea or edamame on top of each dumpling as a garnish.

Step 7

Repeat the process with the remaining wrappers and filling.

Step 8

Line a bamboo steamer basket with parchment paper or cabbage leaves to prevent sticking, and place the siu mai inside, leaving some space between each dumpling.

Step 9

Bring water to a boil in a wok or pot that fits the steamer basket snugly. Place the steamer basket over the boiling water, ensuring the water does not touch the dumplings.

Step 10

Steam the siu mai for about 8-10 minutes until the filling is cooked through and firm.

Step 11

Serve immediately with soy sauce or chili oil for dipping.
