Ingredients

  • 4 large Egg yolks
  • 2 cups Low-fat milk
  • 3 tablespoons Unsweetened cocoa powder
  • 100 grams Dark chocolate
  • 4 tablespoons Sugar or sugar substitute
  • 2 scoops Vanilla protein powder
  • 2 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan, combine the low-fat milk and unsweetened cocoa powder. Stir well to incorporate the cocoa powder into the milk.

Step 2

Place the saucepan on low heat and bring it to a gentle simmer, stirring occasionally to prevent the mixture from scorching.

Step 3

While the milk is heating, finely chop the dark chocolate and set it aside.

Step 4

In a separate bowl, whisk together the egg yolks, sugar (or sugar substitute), and cornstarch until smooth and pale.

Step 5

Gradually pour about 1/2 cup of the heated milk mixture into the egg yolk mixture while constantly whisking. This process is called tempering and prevents the eggs from cooking too quickly.

Step 6

Return the tempered egg mixture to the saucepan with the rest of the milk and cocoa mixture.

Step 7

Cook the custard over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon and does not run together when you draw a line through it. This should take about 10 minutes.

Step 8

Remove the saucepan from the heat and immediately stir in the chopped dark chocolate until fully melted and combined.

Step 9

Add the vanilla protein powder, vanilla extract, and salt, whisking vigorously to ensure everything is smooth and incorporated.

Step 10

Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps and achieve a silky texture.

Step 11

Pour the custard into individual ramekins or serving dishes.

Step 12

Cover each dish with plastic wrap, pressing it directly against the custard surface to prevent a skin from forming.

Step 13

Refrigerate for at least 2 hours or until fully set.

Step 14

Serve chilled, optionally garnished with fresh berries or a dollop of low-fat whipped cream for an extra touch.
