Ingredients

  • 3 large sweet potatoes
  • 1 pound ground turkey
  • 1 cup cooked lentils
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 medium carrot
  • 2 celery stalk
  • 2 cloves garlic
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup Greek yogurt

Directions

Step 1

Peel and cube the sweet potatoes. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until tender.

Step 2

Meanwhile, in a large skillet over medium heat, add olive oil. Chop the onion, carrots, celery, and garlic; then add to the skillet. Sauté for 5-7 minutes until soft.

Step 3

Add the ground turkey to the skillet, cooking until browned and cooked through. Use a wooden spoon to break up the meat as it cooks.

Step 4

Stir in the cooked lentils, peas, tomato paste, Worcestershire sauce, chicken broth, dried thyme, salt, and pepper. Allow to simmer for 10-15 minutes, until the mixture thickens slightly.

Step 5

Drain the cooked sweet potatoes and mash them with Greek yogurt until smooth and creamy. Add salt to taste.

Step 6

Preheat your oven to 400°F (200°C).

Step 7

Transfer the turkey and vegetable mixture into a baking dish, spreading it evenly.

Step 8

Spread the mashed sweet potatoes over the top, smoothing it out to cover the filling completely.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.

Step 10

Let the Shepherd's Pie cool for a few minutes before serving. Enjoy your high-protein meal!
