Ingredients

  • 500 grams ground beef or lamb
  • 2 pieces Extra-Large Eggs
  • 1 piece small onion, finely chopped
  • 2 pieces garlic cloves, minced
  • 2 pieces tomatoes, diced
  • 200 grams plain Greek yogurt
  • 30 grams parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground allspice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 500 grams all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 250 ml warm water
  • 3 tablespoons olive oil

Directions

Step 1

In a large bowl, combine warm water, sugar, and yeast. Allow to sit for 5-10 minutes until frothy.

Step 2

Add 3 tablespoons of olive oil and gradually mix in the flour and salt, stirring until a soft dough forms.

Step 3

Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Step 5

In a large skillet, cook the ground beef or lamb over medium heat until browned. Drain any excess fat.

Step 6

Add chopped onion and minced garlic to the meat, cooking until the onion is tender.

Step 7

Mix in the diced tomatoes, parsley, cumin, allspice, salt, and pepper. Cook for an additional 5 minutes. Remove from heat and set aside to cool.

Step 8

After the dough has risen, punch it down and divide it into 16 equal pieces. Roll each piece into a ball.

Step 9

On a floured surface, roll out each ball into a thin circle about 10-12 cm in diameter.

Step 10

Place 1-2 tablespoons of the meat mixture in the center of each circle. Fold the dough over the filling to form a triangle, pinching the edges to seal tightly.

Step 11

Preheat the oven to 200°C (390°F). Line a baking sheet with parchment paper.

Step 12

Place the sfiha on the prepared baking sheet. Beat the eggs and brush the tops with the egg wash.

Step 13

Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through.

Step 14

Serve hot with a side of Greek yogurt or a salad.
