Ingredients

  • 6 pieces large eggs
  • 4 links chicken sausage
  • 2 cups baby spinach
  • 0.25 cup milk
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Crack the eggs into a large mixing bowl. Add milk, salt, and black pepper. Whisk until well combined and slightly frothy.

Step 2

Heat half of the olive oil in a large non-stick skillet over medium heat. Add the chicken sausage links and cook for about 5-7 minutes, turning occasionally, until they are fully cooked through and browned on all sides.

Step 3

Once cooked, remove the sausages from the skillet and slice them into bite-sized pieces. Set aside.

Step 4

In the same skillet, add the remaining olive oil. Add the baby spinach and sauté for about 1-2 minutes until the spinach is wilted.

Step 5

Pour the egg mixture over the spinach in the skillet. Use a spatula to gently stir the eggs, scraping the sides and bottom of the pan as the eggs begin to set.

Step 6

When the eggs are about half set, add the sliced sausage back into the skillet. Continue to cook, stirring gently, until the eggs are fully cooked but still creamy.
