Ingredients

  • 4 large eggs
  • 2 large egg whites
  • 2 cups fresh spinach
  • 0.5 cup low-fat cottage cheese
  • 1 tablespoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • 0.5 cup cherry tomatoes

Directions

Step 1

Crack the eggs into a medium-sized bowl and add the egg whites. Beat them together with a fork or whisk until well combined.

Step 2

Stir in the low-fat cottage cheese, salt, black pepper, and garlic powder into the beaten eggs, ensuring everything is evenly mixed.

Step 3

Heat a non-stick pan over medium heat and add the olive oil.

Step 4

Once the oil is hot, add the fresh spinach, and sauté for about 1-2 minutes, or until the spinach is wilted.

Step 5

Slice the cherry tomatoes in half and add them to the pan with the spinach. Cook them for another minute.

Step 6

Pour the egg mixture into the pan, gently stirring with a spatula. Continue to cook while stirring occasionally, making sure the eggs are scrambled and cooked through, about 3-4 minutes.

Step 7

Remove the pan from heat as soon as the eggs are set but still slightly soft. They will continue to cook from the residual heat.

Step 8

Serve the high-protein scrambled eggs immediately, warm and fluffy.
