Ingredients

  • 6 pieces large eggs
  • 4 pieces egg whites
  • 3 pieces small red potatoes
  • 2 tablespoons olive oil
  • 0.25 cup low-fat milk
  • 1 cup fresh spinach
  • 2 stalks green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese

Directions

Step 1

Wash and dry the red potatoes. Cut them into small cubes about 1/2 inch in size.

Step 2

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the potatoes and cook them, stirring occasionally, until golden brown and tender, about 12-15 minutes.

While the potatoes are cooking, crack the eggs and egg whites into a mixing bowl. Add the low-fat milk, salt, and black pepper. Whisk until well combined.
