Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 cup canned black beans, drained and rinsed
  • 1 14.5 oz can canned diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 whole wheat tortillas
  • 1 avocado, sliced
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

Step 1

In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 5 minutes until translucent.

Step 2

Add minced garlic and diced bell pepper to the skillet. Cook for another 2-3 minutes until bell pepper softens.

Step 3

Increase the heat to medium-high and add ground turkey to the skillet. Cook for 6-8 minutes, breaking up with a spatula, until browned and cooked through.

Step 4

Stir in the black beans, diced tomatoes, ground cumin, chili powder, salt, and black pepper. Reduce heat to medium and let the mixture simmer for 5-7 minutes to blend the flavors.

Step 5

Warm the whole wheat tortillas in a microwave or on a dry skillet for about 30 seconds to make them pliable.

Step 6

To assemble the burritos, place a quarter of the turkey mixture on each tortilla. Top with sliced avocado, shredded cheddar cheese, and chopped cilantro.

Step 7

Fold in the sides of each tortilla, then roll up from the bottom to enclose the filling.

Step 8

Serve immediately with lime wedges on the side for squeezing over the top.
