Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Thaw the puff pastry sheets according to package instructions.
In a skillet over medium heat, add the olive oil.
Add chopped onion and minced garlic to the skillet and sauté until translucent, about 5 minutes.
Add chicken breast pieces to the skillet, seasoning with salt and pepper, and cook until no longer pink.
