Ingredients

  • 250 grams Mushrooms
  • 400 grams Canned chickpeas, drained and rinsed
  • 60 grams Chickpea flour
  • 1 None Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 tablespoon Soy sauce
  • 3 tablespoons Nutritional yeast
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Ground cumin
  • 1 None Egg
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Clean the mushrooms with a damp paper towel, remove the stems, and finely chop them.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the onions for 2-3 minutes until translucent.

Step 3

Add the garlic and chopped mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and it has mostly evaporated.

Step 4

Stir in the soy sauce, ground cumin, nutritional yeast, salt, and black pepper. Cook for another 2 minutes to incorporate the flavors. Remove from heat and let the mixture cool slightly.

In a large mixing bowl, add the drained chickpeas and mash them using a fork or potato masher until mostly smooth but still a bit chunky.
