Ingredients

  • 500 grams lean ground beef
  • 250 grams brown rice
  • 2 tablespoons olive oil

  • 3 minced garlic cloves
  • 1 large, diced red bell pepper
  • 200 grams broccoli florets
  • 4 tablespoons soy sauce
  • 240 ml beef broth
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt
  • 1 teaspoon ground cumin
  • 2 tablespoons chopped parsley
  • 2 stalks, chopped green onions

Directions

Step 1

Rinse the brown rice under cold water and set it aside.

Step 2

In a large pot, bring 500ml of water to a boil. Add the rinsed brown rice and a pinch of salt to the boiling water. Cover the pot, reduce the heat to low, and let it simmer for 30 minutes or until the rice is tender and the water is absorbed.

While the rice is cooking, heat half of the olive oil in a large skillet over medium-high heat.

Add the diced onion and minced garlic to the skillet and sauté for about 2-3 minutes, until the onion becomes translucent.
