Ingredients

  • 500 grams ground chicken
  • 1 large eggs
  • 50 grams quinoa
  • 50 grams parmesan cheese, grated
  • 50 grams breadcrumbs
  • 2 medium garlic cloves, minced
  • 15 grams parsley, finely chopped
  • 1 teaspoon oregano, dried
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cook the quinoa according to the package instructions and let it cool. This should yield about 150 grams of cooked quinoa.

Step 3

In a large mixing bowl, combine the ground chicken, cooled quinoa, egg, grated Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, dried oregano, salt, and black pepper.

Step 4

Mix the ingredients by hand or with a spoon until everything is well combined, but avoid overmixing to prevent the meatballs from being tough.

Step 5

Form the mixture into 18-20 meatballs, approximately 1.5 inches in diameter, and place them on the prepared baking sheet.

Step 6

Brush each meatball lightly with olive oil to promote browning during baking.

Step 7

Bake in the preheated oven for 20 to 25 minutes or until the meatballs are cooked through and golden brown. An instant-read thermometer inserted into the center should read 165°F (74°C).

Step 8

Allow the meatballs to rest for 5 minutes before serving. Enjoy them as they are, or serve with your favorite sauce or over pasta.
