Ingredients

  • 200 grams fresh spinach
  • 200 grams ricotta cheese
  • 100 grams shredded mozzarella cheese
  • 50 grams grated parmesan cheese
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 sheets puff pastry sheets
  • 1 egg yolk
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Briefly steam or microwave the spinach until wilted, then drain and press out any excess water. Chop finely.

Step 3

In a mixing bowl, combine the ricotta cheese, mozzarella cheese, parmesan cheese, spinach, large egg, salt, black pepper, and garlic powder. Mix until fully incorporated.

Step 4

On a clean, lightly floured surface, roll out the puff pastry sheets. They should be slightly larger than their original size, about 12 inches square.

Step 5

Spread the cheese and spinach mixture evenly over each pastry sheet, leaving a 1-inch margin on all edges.

Step 6

Carefully roll each pastry sheet into a tight log, starting from one edge, rolling towards the opposite edge.

Step 7

Once rolled, pinch the seams to seal, then slice each log into approximately twelve 1-inch thick pinwheels.

Step 8

In a small bowl, whisk together the egg yolk and water to create an egg wash.

Step 9

Place the pinwheels cut-side down on the prepared baking sheet, and brush the tops lightly with the egg wash.

Step 10

Bake for 20-25 minutes or until the pinwheels are golden brown and puffed.

Step 11

Let the pinwheels cool on a wire rack for a few minutes before serving.
