Ingredients

  • 1 cup whole wheat flour
  • 0.5 cup oat flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup whey protein powder
  • 1 cup Greek yogurt
  • 0.5 cup milk
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 0.25 cup fresh chives, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 12-count muffin tin with paper liners or grease it lightly with cooking spray.

Step 2

In a large mixing bowl, combine whole wheat flour, oat flour, baking powder, baking soda, salt, black pepper, and whey protein powder. Stir to combine the dry ingredients well.

Step 3

In a separate medium bowl, whisk together Greek yogurt, milk, eggs, and olive oil until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix.

Step 5

Fold in the shredded cheddar cheese and chopped chives until evenly distributed throughout the batter.

Step 6

Evenly divide the batter among the prepared muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store any leftover muffins in an airtight container for up to 3 days or freeze for longer storage.
