  • 15 oz Canned salmon
  • 2 large Eggs
  • 1 cup Chickpea flour

  • 2 tbsp, finely chopped Fresh parsley
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 3 tbsp Olive oil

Directions

Step 1

Open the canned salmon and drain well. Transfer the salmon to a large mixing bowl and flake it with a fork, picking out any large bones.

Add the eggs, chickpea flour, finely chopped onion, red bell pepper, green onions, minced garlic, and parsley to the bowl with the salmon.

Mix in the lemon juice, Dijon mustard, salt, and black pepper. Stir until all ingredients are well combined and the mixture holds together.

Divide the mixture into 8 equal portions and shape each into a patty, pressing firmly to ensure they hold together.
