  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Cut the eggplants lengthwise into 1/2-inch thick slices.

Arrange the eggplant slices on a baking sheet lined with parchment paper.
