Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic cloves, minced
  • 1 pound lean ground beef (90% lean or higher)
  • 1 pound ground turkey
  • 3 tablespoons tomato paste
  • 28 ounces canned crushed tomatoes
  • 1.5 cups low-sodium beef broth
  • 1 medium carrot, grated
  • 1 medium red bell pepper, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups baby spinach, roughly chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5 minutes, until translucent.

Step 2

Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to avoid burning.

Step 3

Increase the heat to medium-high and add the ground beef and ground turkey to the pot. Cook and stir until the meat is browned and cooked through, approximately 8-10 minutes.

Step 4

Stir in the tomato paste, cooking for 1 minute to enhance the flavor.

Step 5

Add the crushed tomatoes and beef broth. Stir well to combine.

Step 6

Mix in the grated carrot and chopped red bell pepper, followed by the oregano, basil, salt, and black pepper.

Step 7

Bring the sauce to a gentle simmer. Reduce the heat to low, cover, and let it cook for approximately 20-25 minutes, stirring occasionally.

Step 8

In the last 5 minutes of cooking, stir in the chopped baby spinach until wilted and incorporated.

Step 9

Taste and adjust the seasoning with more salt and pepper if needed before serving.
