Ingredients

  • 1 cup Brown rice
  • 3 cups Unsweetened rice milk
  • 1 scoop Vanilla plant-based protein powder
  • 3 tablespoons Maple syrup
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Chopped nuts (optional)
  • 0.5 cup Fresh berries (optional)

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the rinsed rice, rice milk, maple syrup, cinnamon, vanilla extract, and salt.

Step 3

Bring the mixture to a boil over medium-high heat, stirring occasionally.

Step 4

Once boiling, reduce the heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally to prevent sticking.

Step 5

Stir in the vanilla plant-based protein powder until fully incorporated. If the mixture is too thick, you can add a splash more rice milk to reach the desired consistency.

Step 6

Remove the saucepan from heat and let it sit for a few minutes before serving to allow the flavors to meld.

Step 7

Spoon the rice pudding into serving dishes and garnish with chopped nuts and fresh berries if desired.

Step 8

Serve warm or transfer to the refrigerator to chill for a cold treat.
