  • 1 cup Whole wheat flour
  • 0.5 cup Oat flour
  • 2 scoops Vanilla protein powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Greek yogurt
  • 0.5 cup Unsweetened almond milk
  • 1 Egg
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh raspberries

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, oat flour, protein powder, baking powder, baking soda, and salt.

Step 3

In another bowl, combine the Greek yogurt, almond milk, egg, honey, and vanilla extract. Whisk until the ingredients are well blended and smooth.

Pour the wet ingredients into the dry ingredients. Stir gently until just combined and no dry flour remains. Be careful not to over-mix.
