  • 1 cup Black beans, drained and rinsed
  • 2 cups Shredded Monterey Jack cheese
  • 1 cup Shredded low-fat mozzarella cheese
  • 0.5 cup Greek yogurt
  • 0.25 cup Sliced jalapeños
  • 2 tablespoons Cilantro, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat.

Step 3

Add the ground turkey and chorizo to the skillet, breaking them apart with a spatula, and cook until browned, about 5-7 minutes.

Step 4

Remove the meat from the skillet and set aside, leaving the drippings in the pan.

Add the finely chopped onion and bell pepper to the skillet and sauté until softened, approximately 5 minutes.
