Ingredients

  • 4 pieces turkey breast fillets
  • 1 cup whole wheat breadcrumbs

  • 4 large egg whites
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bottle olive oil spray

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Place each turkey breast fillet between two sheets of plastic wrap. Using a meat mallet, gently pound the fillets to about 1/2-inch thickness.

Step 3

In a shallow dish, combine whole wheat breadcrumbs, oat flour, grated Parmesan cheese, dried oregano, dried thyme, salt, and black pepper. Mix well.
