Ingredients

  • 2 cups whole wheat flour
  • 0.5 cup soy protein isolate
  • 2.25 teaspoons instant yeast
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 0.25 cup baking soda
  • 1 cup warm water (for baking soda solution)
  • 1 tablespoon pizza seasoning blend
  • 1 large egg
  • 0.5 cup shredded mozzarella cheese
  • 18 pieces pepperoni slices

Directions

Step 1

In a large bowl, combine warm water, honey, and yeast. Let it sit for 5 minutes or until it becomes frothy.

Step 2

Add whole wheat flour, soy protein isolate, olive oil, salt, and pizza seasoning blend. Mix until a dough forms.

Step 3

Knead the dough on a floured surface for about 5-7 minutes, until it is smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 5

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Step 6

In a small bowl, mix the baking soda with 1 cup of warm water to make a solution.

Step 7

Divide the dough into 4 equal portions. Roll each piece into a long rope (about 18 inches) and shape each into a pretzel.

Step 8

Dip each pretzel into the baking soda solution and place it onto the prepared baking sheet.

Step 9

Beat the egg and brush the top of each pretzel with the egg wash.

Step 10

Sprinkle shredded mozzarella cheese over each pretzel and place pepperoni slices on top.

Step 11

Bake in the preheated oven for 12-15 minutes or until the pretzels are golden brown and the cheese is melted.

Step 12

Remove from the oven and let the pretzels cool for a few minutes on a wire rack before serving.
