  • 200 grams All-purpose flour
  • 100 grams Unsalted butter
  • 150 grams Cottage cheese
  • 100 grams Pistachios, shelled and chopped
  • 50 grams Whey protein powder (unflavored)
  • 60 milliliters Water
  • 50 grams Sugar
  • 1 teaspoon Salt
  • 1 large Egg (for egg wash)
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whey protein powder, salt, and sugar. Mix the dry ingredients together until well combined.

Step 2

Cut the unsalted butter into small cubes. Add the butter to the dry mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse breadcrumbs.

Stir in the cottage cheese and water gradually, mixing until the dough comes together into a ball. Avoid overmixing to keep the pastry flaky.
