Ingredients

  • 3 large Egg Whites
  • 150 grams Honey
  • 200 grams Granulated Sugar
  • 100 milliliters Water
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Salt
  • 60 grams Unsweetened Protein Powder
  • 100 grams Shelled Pistachios
  • 10 sheets Edible Rice Paper

Directions

Step 1

Line a rectangular baking pan with parchment paper and place edible rice paper sheets on the bottom.

Step 2

In a small saucepan, combine honey, granulated sugar, and water. Stir over medium heat until sugar dissolves, then increase heat to medium-high and boil without stirring until the mixture reaches 140°C (285°F) on a candy thermometer.

Step 3

While the syrup is heating, whip the egg whites and salt until medium peaks form with an electric mixer.

Step 4

Once the syrup reaches the desired temperature, slowly pour it into the whipped egg whites while continuing to beat the mixture on medium speed.

Step 5

Add the vanilla extract and continue beating the mixture until it cools slightly and thickens, approximately 5-7 minutes.

Step 6

Gently fold in the protein powder, ensuring it's thoroughly incorporated.

Step 7

Add the shelled pistachios and fold them into the nougat mixture gently with a spatula.

Step 8

Pour the nougat mixture into the prepared baking pan, smoothing the top with a spatula. Cover with additional sheets of edible rice paper.

Step 9

Let the nougat cool completely at room temperature before slicing it into bars or squares.

Step 10

Store in an airtight container at room temperature, ensuring no moisture gets to the nougat.
