  • 0.5 cup Vanilla protein powder
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Unsweetened almond milk
  • 0.5 cup Greek yogurt
  • 2 large Eggs
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.75 cup Pistachios, shelled and chopped

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

Step 2

In a large mixing bowl, combine the all-purpose flour, vanilla protein powder, baking powder, and salt. Whisk together to ensure milk and yogurt.

In a separate bowl, whisk together the almond milk, Greek yogurt, eggs, honey, and vanilla extract until smooth.
