  • 3 Star anise
  • 6 Whole cloves
  • 2 tablespoons Coriander seeds
  • 2 inches Ginger, sliced
  • 1 Onion, halved
  • 0.25 cup Fish sauce
  • 1 piece Rock sugar
  • 2 tablespoons Salt
  • 4 Scallions, chopped
  • 0.5 cup Fresh cilantro, chopped
  • 2 cups Bean sprouts
  • 1 cup Thai basil leaves
  • 1 Lime, cut into wedges
  • 2 Thinly sliced red chili peppers
  • 0.25 cup Hoisin sauce
  • 0.25 cup Sriracha or other chili sauce

Directions

Step 1

Begin by parboiling the beef bones: Place bones in a pot, cover with water, and bring to a boil for about 10 minutes. This helps remove impurities.

Step 2

Drain and rinse the bones under cool water.

Step 3

In a large stockpot, add the cleansed beef bones, chicken breast, cinnamon stick, star anise, cloves, coriander seeds, ginger, and onion.

Fill the pot with about 10 cups of water. Bring to a boil, then reduce the heat and let it simmer uncovered for about 4 hours.
