  • 300 g whole wheat penne pasta
  • 2 pieces chicken breast, boneless and skinless
  • 200 g adzuki beans, canned
  • 1 cup fresh basil leaves
  • 1 cup baby spinach
  • 50 g parmesan cheese, grated
  • 40 g pine nuts
  • 2 pieces garlic cloves
  • 60 ml extra-virgin olive oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon water
  • 1 tablespoon olive oil

Directions

Step 1: Begin by bringing a large pot of salted water to a boil and cook the whole wheat penne pasta according to package instructions until al dente. Drain, reserving a cup of the pasta water, and set aside.

Step 2: While the pasta is cooking, season the chicken breasts with salt and black pepper.
