Ingredients

  • 1.5 cups Old-fashioned oats
  • 0.5 cup Whey protein powder
  • 0.5 cup All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Creamy peanut butter
  • 0.25 cup Unsalted butter, softened
  • 0.5 cup Brown sugar, packed
  • 0.25 cup Granulated sugar
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the oats, protein powder, flour, baking soda, and salt. Set aside.

Step 3

In a large bowl, beat the peanut butter, butter, brown sugar, and granulated sugar together using a hand mixer until creamy and well combined.

Step 4

Add the egg and vanilla extract to the peanut butter mixture and continue to beat until smooth.

Step 5

Gradually add the dry ingredients into the wet ingredients, mixing until just combined.

Step 6

Fold in the chocolate chips using a spatula.

Step 7

Scoop tablespoon-sized amounts of dough and place them onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will continue to firm up as they cool.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
