Ingredients

  • 1 cup Natural peanut butter
  • 1 scoop Whey protein powder (vanilla or unflavored)
  • 1 cup Rolled oats
  • 0.5 cup Honey
  • 1 large Egg
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.75 cup Dark chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the natural peanut butter, honey, egg, almond milk, and vanilla extract. Stir until smooth and well combined.

Step 3

In another bowl, whisk together the whey protein powder, rolled oats, baking soda, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.

Step 5

Fold in the dark chocolate chips until evenly distributed throughout the dough.

Step 6

Using a tablespoon, scoop dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.

Step 7

Flatten each cookie slightly with the back of the spoon, as they will not spread much during baking.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy your high protein peanut butter chocolate chip cookies fresh or store them in an airtight container for up to a week.
