Ingredients

  • 250 grams all-purpose flour
  • 50 grams chickpea flour
  • 2 tablespoons olive oil
  • 150 milliliters warm water
  • 1 teaspoon salt
  • 300 grams ground chicken
  • 1 medium, chopped onion
  • 2 cloves, minced garlic
  • 100 grams cooked chickpeas
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cumin powder
  • 0.5 teaspoon chili flakes
  • 2 tablespoons, chopped fresh parsley
  • 500 milliliters canola oil

Directions

Step 1

In a large bowl, combine all-purpose flour, chickpea flour, and 1 teaspoon of salt.

Step 2

Add olive oil and warm water into the flour mixture. Mix together until it forms a dough.

Step 3

Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 20 minutes.

Step 4

While the dough is resting, prepare the filling. Heat a non-stick skillet over medium heat and add the ground chicken. Cook until browned, approximately 5-7 minutes.

Step 5

Add chopped onion and minced garlic to the skillet with the chicken. Cook until onions are translucent.

Step 6

Stir in black pepper, cumin powder, chili flakes, and salt to taste. Cook for 2 minutes until fragrant.

Step 7

Add cooked chickpeas to the skillet and use a fork to lightly mash them, leaving some whole for texture.

Step 8

Mix in fresh parsley and remove the filling from heat. Let it cool slightly.

Step 9

Divide the rested dough into small balls, about the size of a golf ball.

Step 10

Roll each ball into a flat circle, about 12 cm in diameter.

Step 11

Place 2 tablespoons of filling on one half of the circle, leaving a border. Fold the dough over the filling to form a half-moon, and press the edges with a fork to seal.

Step 12

In a deep frying pan, heat canola oil over medium-high heat.

Step 13

Deep fry each pastel until golden brown and crispy, approximately 2-3 minutes per side.

Step 14

Remove pastels from oil and drain on a paper towel-lined plate to remove excess oil.

Step 15

Serve warm with your choice of dipping sauce.
