Ingredients

  • 12 ounces high protein pasta
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 8 ounces mixed mushrooms, sliced
  • 4 cups spinach, fresh
  • 1 cup chicken or vegetable broth
  • 3/4 cup cottage cheese
  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil and cook the high-protein pasta according to the package instructions. Drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.

Step 3

Add the minced garlic to the skillet, stirring for another minute until fragrant.

Step 4

Add the sliced mushrooms to the skillet and cook until they have released their moisture and begin to brown, approximately 7-8 minutes.

Step 5

Stir in the fresh spinach and cook until just wilted, about 2 minutes.

Step 6

Pour in the chicken or vegetable broth and bring to a simmer. Let it reduce slightly for about 3 minutes.

Step 7

Reduce heat to low, and gently stir in the cottage cheese, allowing it to melt smoothly into the sauce.

Step 8

Add the grated parmesan cheese, salt, and black pepper, stirring until the sauce is thick and creamy.

Step 9

Combine the cooked pasta with the mushroom sauce in the skillet, tossing to coat the pasta evenly with the sauce.

Step 10

Garnish with chopped fresh parsley and serve immediately.
