Ingredients

  • 3 large eggs
  • 1.5 cups almond flour

  • 0.25 cup coconut oil, melted
  • 0.25 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper, or grease it lightly with coconut oil.

In a large mixing bowl, mash the ripe bananas until smooth. Add the eggs, melted coconut oil, pure maple syrup, and vanilla extract. Whisk together until well blended.
