Ingredients

  • 500 g lean ground chicken or turkey
  • 1 tbsp vegetable oil
  • 4 garlic cloves, minced
  • 2 red chili, diced
  • 1 medium onion, sliced
  • 2 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 tbsp water
  • 1 cup fresh Thai basil leaves
  • 4 servings cooked jasmine rice
  • 4 lime wedges
  • 4 fried eggs (optional)

Directions

Step 1

Heat the vegetable oil in a large pan or wok over medium-high heat.

Step 2

Add the minced garlic and diced red chili to the pan, stir-frying for about 30 seconds until fragrant.

Step 3

Add the sliced onion to the pan and stir-fry for 2-3 minutes until it becomes translucent.

Step 4

Increase the heat to high and add the ground chicken or turkey, cooking for 5-7 minutes. Break apart the meat and cook until it's browned and cooked through.

Step 5

In a small bowl, mix together the fish sauce, oyster sauce, soy sauce, sugar, and water. Pour this sauce mixture over the cooked meat.

Step 6

Stir well to combine everything, then toss in the fresh Thai basil leaves. Cook for another 1-2 minutes until the basil is wilted and the flavors are well combined.

Step 7

Remove from heat and serve the Pad Krapow hot over cooked jasmine rice.

Step 8

Garnish each serving with a lime wedge for squeezing over the dish, and top with a fried egg if desired.
